The Deepin installation process does not allow the user to decide which will be the «root», root or administrator password, therefore when placing a command such as:

su

It will be difficult to know what it is, even so, it is very easy to change the "root" password in deepin, you must use the following instruction:

sudo passwd root

It will ask you to choose the new password for the system and its confirmation, you can enter as "root" below and do whatever you want.

hmm, in my case just "sudo passwd" worked to change the root password.
